Vita-Mix Giveaway!

Oh yes, you read that correctly, I’m giving away a Vita-Mix! After a long dreary winter we could all use some cheering up and in an attempt to make one lucky person especially happy, I’m giving away a brand new Vita-Mix 5200. If you’ve never heard of Vita-Mix then you live under a rock. Seriously. It’s a high powered blender that can chew up virtually anything. How do I know this?
Quick Raspberry Ice Cream

Recently the wonderful people at Vita-Mix offered to let me try one out and I jumped at the chance. I love kitchen toys and this is a particularly awesome one. After playing around with it for a while, (and pretty much throwing everything in my fridge and cupboard into the canister just to watch it blend) I decided it was selfish of me to keep something so great all to myself. But I didn’t want to give it up though either. So I asked Vita-Mix if they would be willing to give away another blender to one of my readers. They graciously agreed and there you have it.

I’m not the only one who thinks highly of Vita-Mix. Michael Ruhlman lists their blender as one of his favourite kitchen gadgets, (besides his hands that is). And I could give you a list of all the things you can do with your Vita-Mix, but we’d be here forever.

Almond and Lemon Macaron

Here are a few random suggestions:

  • Grind your own almonds and then proceed to make Almond and Lemon Macarons.
  • Whip up a homemade prune and Armagnac bbq sauce and then smother it on ribs.
  • Whir together some cream, sugar and frozen fruit and you’ve got soft serve ice cream, freeze it a little longer if you want to be able to scoop it.
  • Smoothies, smoothies, smoothies.
  • Soup! You can make hot soup, from raw ingredients in about 5 minutes. And the texture is out of this world, super smooth.

My favorite spring recipe is Watergate Cake, because we always have it at Easter. It's a pretty cheesy favorite recipe to have, just a doctored cake mix, but it reminds me of family :)

This blender is on my wedding gift registry (gooo amazon.com!) but I have a sneaking suspicion that it's a bit too pricey for anyone to pick it out. And my "Hamilton Beach" blender can't even do smoothies without ice. It's a sad thing.

My fave Spring recipe is Pesto Salmon. It's so simple, too! Just grill/sear the salmon and add salt, pepper and homemade or store-bought pesto to the top. Yummmm.

My favorite spring food is gelato. Once it is warm out, myhusband and I walk down to the shop and treat ourselves. The walk is about 4 miles roundtrip, so it is a perfect Sunday afternoon activity.

i need it!! my favorite spring recipe is what we call 'Beach Pasta'
a box (13oz) of rotini noodles cooked and cooled
in a separate bowl mix 1/3c italian dressing and 2/3 c mayo and pour over noodles coating them well.
add a small can of chopped olives and 1-2 cans of white chicken (or a few boiled chicken breasts or a cutup rotisserie chicken). finish mixing everything together and enjoy w/ parmesean cheese sprinkled on top.
this makes a big batch and is great for get-togethers. we use it for our play groups.

Sweetie would be in heaven...he loves smoothies. Here is a great & simple spring recipe: wash, remove leaves and slice strawberries into individual serving bowls. Top with plain yogurt and a good grating of lemon zest. Drizzle with honey to taste...enjoy!
Great for breakfast, snack or dessert. Yum with blueberries, too.

What an incredible giveaway! Spring for me means anything with berries, usually just an entire bowl of strawberries and blueberries and raspberries ... Yum! Also, anything with basil, especially pesto or a tomato, mozzarella and basil salad, cliche I know, but still so good. Basil just smells like spring!

Wow!!! I would totally love to win this one! My favorite Sprin Recipe beleive it or not is any kind of smoothie. I typically don't make them in the winter time because I prefer something warm to drink, but when sprin rolls around there is nothing better than a berry smoothie to start my day! To really top of my post, my blender currently took a turn for the worst and doesnt work so I need a new one and this would really help, pick me!!!!

Oh goodness! I would LOVE to have one of these. My mom & sister both have one and there's SO much you can do! It would be terrific to make smoothies for my kids (and sneak in all those healthy fruit & veggies for a certain anti-fruit child).

Favorite spring (& summer) recipe - wraps. My youngest son & I love them with whipped cream cheese, ham, cheddar cheese, and diced apple. Simple and delish!

I would seriously die of happiness if I won this! I've almost bought one a million times, most notably after I discovered I can't find any of the blades for my food processor.

Anyhow, my favorite spring recipe is a basic salad with fresh fruit on top (think strawberries) and a nice balsamic dressing. Easy, fresh, and simple.

one in particular is the Strawberry Sunrise Smoothie

1 cup strawberries
1 cup orange juice
1 cup vanilla yogurt
1 Tbsp honey
1 banana
1/2 cup low fat milk

put all into blender and make smooth! then enjoy!

My spring in Ontario recipe is any improvisation using wild ramps . Including blended into a sauce or soup, Ramps along with fiddleheads and then fava beans are our rewards for enduring another northern winter.

Picking a favorite spring recipe is hard!! I always go a little crazy in the kitchen once the abundance of pretty, brightly colored local produce starts showing up around the town. I think I'd have to go with some kind of vegetable soup [maybe pea-leek-tarragon, or kabocha-miso, or mushroom barley] with some fresh baked bread and a nice big salad with mixed greens, some fruit, and nuts and seeds topped with some other veggies and a light yet flavorful dressing.

Vitamixes are soooooooooo awesome. I have wanted one for so, so long.

So my room mate just broke my blender jar. I almost cried as I swept up the thousands of glass shards that littered our apartment. Now I am pesto, soup and smoothie-less because I can't afford a new one on my student budget. Winning this Vita-Mix would be so perfect.

But that's not why I'm posting - I just adapted these cream cookies from Cannelle & Vanille (http://bit.ly/AMjXf) to be maple ones since spring is syrup season here. I replaced 20gms of sugar w/ B grade syrup, replaced the lemon oil with maple extract and left out the zest. For the butter cream, i used 100gms of sugar and 70 gms of B grade syrup to make up the volume difference, plus the liquid from the lemon juice. I'm still experimenting, but they were delicious.

I was served a butternut squash soup made in a Vita-Mix at a friend's house that tasted so rich and creamy without any cream. I keep thinking of it months later! I do put cream in my own squash soup and puree with a little immersion blender but there is no comparison to how luxurious the Vita-Mix soup was.
My springy potato leek soup would be Amazing in a Vita-Mix. Lots of leeks cooked slowly in butter until sweet and soft, then simmered with a few thinly sliced Yukon Gold potatoes and homemade chicken stock and pureed and finished with fresh lemon juice and splash of heavy cream. So simple and so wonderful. I could cut back on the cream or leave it out and actually improve the soup with a Vita-Mix!
Oooh I want one.

I drool at the mention of Vita-mix. My favorite Spring recipe is anything with herbs. The latest one is a salmon pita.

Smoked Salmon
Butter Lettuce
Grilled Vegetables
6 to 8 oz plain yogurt
1 clove minced garlic
Juice of 1 lemon
2 tsps chopped dill
4 oz cream cheese at room temperature
Pita

In a small bowl, mix yogurt, garlic, lemmon, dill, and cream cheese. Season with salt and pepper. In one half of a pita, stuff with smoked salmon, vegetables, and lettuce. Drizzle with dill sauce.
