Every now and then I manage to make breakfast for breakfast, but this only happens if I plan on it the night before. I’d been thinking about these chocolate chip pancakes with bacon for quite a while before they actually happened. What finally spurred me into action was a Dorie Greenspan post, (quelle surprise!) about how bacon in sweets is the trend of the moment. It’s not a concept that’s new to me as I’ve been a lover of bacon brittle and bacon with waffles and maple syrup for some time now but seeing the combo again made me crave it. I’ve also had a craving for these Bacon Chocolate Chip cookies but they will have to wait for another morning.
As for the breakfast burrito, I’ve seen numerous links to a Gordon Ramsey video, (click below to see it yourself) where he shows how to make perfect scrambled eggs and I wanted to try his technique. Breakfast burritos are a regular for me, but usually the contents of the burrito are last night’s supper. This time around I wanted to actually fill the burrito with breakfast contents, like Gordon Ramsey’s eggs, bacon, (of course) red onions and green and orange peppers. I cooked the eggs just like Ramsey shows how to do and then I added them to my other filling which I had made up by rendering the bacon and then frying the onion and peppers in the bacon grease. Before I wrapped it all up in a warm flour tortilla I added some shredded smoked

Oboy! You just reminded me that my breakfast plan is not working, haha :) I need to sleep and wake up much earlier. Those breakfast burritos do look good (if a little too filling for me in the morning!). It's certainly a step up from half a cup of yogurt, haha! :D
What a riot of irony this is! A vegan in our office came in today and tried to claim to me that "What Would Bacon Do" Spinner wheel is just morally wrong. Decision this morning was that tomorrow we will have a bacon taste off by three people in our office who eat meat but also eat vegetarian. The taste off? Tofu Bacon vs the real mccoy.
Now off to lunch to have me a Bacon Cheeseburger....
While I love bacon, I definitely shouldn't be eating it :D
But Bacon Chocolate Chip Cookies? Reminds me of that Simpsons episode where Homer prays for a delicious new food, and a bacon truck crashes with a chocolate fudge truck to create bacon fudge :D
I don't usually have time to make breakfast in the morning - and these both look so much better than the piece of toast I had!!
I rarely eat breakfast during the week, but I do make time for it on weekends.

Thanks for posting that video of Gordon. I have never seen eggs cooked that way before. I will definately be trying that.

Btw, did you add Crème Fraîche to your eggs? It is not a usual ingredient in my refrigerator.

We have similar eating patterns, but it seems as if weekends are the only time I have for a proper breakfast-time breakfast.

I don't do much for breakfast, with the occasional exception during the weekend where I'll go overboard (overcompensating, I guess). And you certainly can't go wrong with bacon!
Also, I'm a big fan of the Ramsey eggs, as well. I've tried sour cream as well as goat cheese in place of the creme fraiche, both of which work wonderfully
bacon + maple syrup = a delight! especially as ice cream. bacon + anything, really = hard to beat.

I really love bacon with my pancakes. I rarely eat bacon otherwise. I can see why bacon and sweets has become a trend. They go great together.

I too wake up feeling famished - my stomach can't handle heavy foods early in the day though, so I usually eat a small muffin or a bowl of cereal or oatmeal. As for the bacon and chocolate chip cookies - isn't there a new frozen breakfast "dog on a stick" that has pancake batter, bacon and chocolate? I saw it on The Daily Show and was like whaaa?!
